Is their a way to pick a user and then be able to see what this user has access to on a particular server.

Meaning which folders/shares/etc, and what that access is? R/O or R/W?

You can search NTFS permissions for a specific user by right-clicking on the share(s) you want and choosing View NTFS Security. On that dialog is box to specify the user or group you want to search for.
