How much does exporting uptime affect system performance? Any way to limit the performance hit?

It may affect performance based on the fact that it is an additional call to each computer to get this information. Exporter/Hyena can't control this. The impact mainly is on the time it takes Exporter to complete.

So the performance hit isn't on the servers but the machine you're running the export from - is that correct?

That's correct. It is more information being retrieved, so when you multiply that by many servers, this will make the Exporter process take longer. This does not impact your servers, though.
