Is it possible to export the last used date for a partucular software item?

You might try the Last Access Time field on the executable for the software. Such as excel.exe for Excel.

I tried finding this in the WMI/Product area, is it somewhere else?

You can view this in Hyena by viewing Shares on a computer, then navigating down to the directory and double-clicking on the directory to view the files in the right-hand window. If you need this across multiple servers/computers Exporter Pro can do this for you using the File/Directory template.
