Is there a way to generate a report on a folder(s) to create an output of files in order of date last used/modified?

You can double-click on a share or directory for a computer in Hyena to display the files in the right-hand window. There you can click on the column header for Last Access Time or Last Time Written to sort by that column.

When I'm viewing the folders in the pane on the right, is there any way for Hyena to list the size of those folders as well? (The 'Size' column is empty for the folders)

No, the size attribute doesn't apply to folders, it has to be calculated. You'll notice when you use Explorer to look at a folder you can see it adding up the information. Hyena can't do that. We added this functionality to Exporter Pro where it can add up the information in a field called Dir Files(bytes).
