How can I export the field Email under the Contact tab? I have not seen a field to select in exporter pro.

In AD, the email and all contact information is split into more than one attribute generally.

The 'mail' attribute contains one address. If you have others, they are stored in the 'proxyaddress' attribute. In Exporter Pro, the mail attribute is listed under General User Attributes; the other email attribute is listed under Exchange Attributes.

You can also get this information visually in Hyena by right clicking on All Users and running the User - Detailed Contact query. You can customize this query under File->Manage Object View to add the other email attribute if you want to.
