Use Performance Features a la PerfMon

I am familiar with the Performance display features within Hyena. I would like to send perf data to a file similar to Microsoft's Performance Monitor so I can log this data over a period of time for a machine or series of machines.

I am using Hyena v5.0 -- is this ability included or am I just unable to locate it?

You can save any data that is in the right window to a file, but it won't continuously log that data.
